Thai Mango Sticky Rice | Siam Kitchen

⏱️ Preparation Time: 45 minutes (plus 4 hours soaking time)


Ingredients

  • 1 cup Thai glutinous (sticky) rice
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • 1 tablespoon toasted sesame seeds (optional)
  • For the Coconut Sauce
  • 1/2 cup coconut milk
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch (optional, for thickening)

Preparation

  1. Soak the sticky rice in cold water for 4-6 hours or overnight
  2. Drain the rice and steam for 20-25 minutes until tender
  3. While rice is cooking, heat 1 cup coconut milk with sugar and salt until sugar dissolves
  4. Pour the warm coconut mixture over the cooked rice, stir gently, and let sit for 30 minutes
  5. For the sauce, heat 1/2 cup coconut milk with sugar and salt until simmering
  6. If using cornstarch, mix with a little water and add to thicken the sauce
  7. Serve the sticky rice with fresh mango slices
  8. Pour the coconut sauce over the top
  9. Sprinkle with toasted sesame seeds if desired

Best served warm or at room temperature
