Thai Mango Sticky Rice | Siam Kitchen
⏱️ Preparation Time: 45 minutes (plus 4 hours soaking time)
Ingredients
- 1 cup Thai glutinous (sticky) rice
- 1 cup coconut milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- 1 tablespoon toasted sesame seeds (optional)
- For the Coconut Sauce
- 1/2 cup coconut milk
- 1 tablespoon sugar
- 1 teaspoon cornstarch (optional, for thickening)
Preparation
- Soak the sticky rice in cold water for 4-6 hours or overnight
- Drain the rice and steam for 20-25 minutes until tender
- While rice is cooking, heat 1 cup coconut milk with sugar and salt until sugar dissolves
- Pour the warm coconut mixture over the cooked rice, stir gently, and let sit for 30 minutes
- For the sauce, heat 1/2 cup coconut milk with sugar and salt until simmering
- If using cornstarch, mix with a little water and add to thicken the sauce
- Serve the sticky rice with fresh mango slices
- Pour the coconut sauce over the top
- Sprinkle with toasted sesame seeds if desired
Best served warm or at room temperature
